Four Summer Recipes to Try in August

Isn’t summer the best season, when it comes to food? Yet, while there is an abundance of fresh produce in the stores and at the market, I have the tendency to end up preparing the same dishes over and over again – mostly vegetables or meat from the grill, accompanied by a huge salad.

I decided that it was time to try out some new stuff, so I searched the web for a bunch of summer recipes that I want to make in August. You can find my 4 favorite recipes below. Not only do they look delicious, but they seem to be super easy to make. While scrolling through these, you might realize that I have a thing for sandwiches in summer.

1. Toast with Peaces, Tahini & Honey by Tending the Table

Alongside raspberries and watermelon, peaches must be my favorite summer fruit. I mostly eat them as they are or mix them in yogurt. I also tried out some salads that included peaches, but I have never put them on bread! Until now: this Toast with Peaches, Tahini and Honey looks just fantastic.

2. Broad Bean Summer Tartine by Mostly Saturdays

I had the privilege of getting a taste of Maria and Will’s cooking when I spent some time in Sydney back in 2013. The two really have a knack for making things taste amazing! So, I will definitely have to give their Broad Bean Summer Tartine a try.

3. Watermelon Radish and Cucumber Salad by Downshiftology

How beautiful are watermelon radishes? I wonder if I will manage to get my hands on a bunch to make this Watermelon Radish and Cucumber Salad – keep your fingers crossed. But even if I have to make this salad with regular daikon or red radishes, it’s probably worth a try. I think it might be the perfect companion for some steak.

4. Open Faced Tomato and Goat Cheese Sandwich with Hot Bacon Vinagrette by Half Baked Harvest

You had me at Bacon Vinaigrette, dear Open Faced Tomato and Goat Cheese Sandwich with Bacon Vinaigrette! I have been enjoying tomato sandwiches since my Mom made them when I was a child, but I love the twist with the goat cheese and the vinaigrette. Yum!

So, what’s your favorite summer dish?

P.S. Thanks to Sasha, Maria, Lisa and Tieghan for sharing these recipes & for letting me use your beautiful pictures!
